Cilantro Lime Guacamole


Buying an avocado has never led to anything bad tasting in my house. In this case it led me to make the best guacamole I’ve ever prepared. The smooth texture of the avocado paired perfectly with the slightly tough texture of the tomato. I also added cilantro and lime, which added a little bite to the mild taste of the avocado. To add some spice, I added fresh minced garlic. The delicious dip was complete after adding salt and pepper. Sadly, I thought the avocado was a vegetable, until tonight. I guess it is a fruit that masked itself as a vegetable in my eyes (just like the tomato, which had me fooled for years as a kid!). I met my vegetable quota anyways because I had a carrot stick snack and meatless Monday leftovers for lunch. I’ve included the recipe for the cilantro lime guacamole and for the cayenne Greek yogurt recipe I dipped my carrots in.

Cilantro lime guacamole: 

1 avocado

1/2 tomato

1/2 juice of a lime

2 cloves of garlic

1 tbsp of fresh cilantro

1/4 tsp of pepper, salt, and garlic powder


1. I started by dicing the tomato and mincing the garlic.

2. After combining those two ingredients, I added the juice of half a lime (which helps the guacamole keep its green color).

3. Then I chopped up the cilantro and halved the avocado. Instead of taking off the skin before dicing the avocado, I dice it inside the skin and squeeze it out (minimal mess!).  Finally I used the potato masher to create the chunky final product seen in the picture. It came out delicious, but it was so simple. It also added to the flavor of the ground turkey tacos wrapped in whole corn tortillas.

Cayenne Greek yogurt dip: 

1/2 cup of Greek yogurt (I used Trader Joe’s brand)

1/4 tsp salt, pepper, garlic powder and cayenne pepper


1. Mix all of the ingredients together and you have a simple healthy dip that goes great with vegetables like carrots. It also adds some protein to this vitamin rich snack.
