Tonight was one of those nights where I didn’t have a lot of time to prepare dinner. We had to be out the door at 5:30, so we could head to obedience class with the poodles. I still wanted to continue with trying to eat more leafy greens, so I added them to naan pizzas. I’ve been using wheat grain naan bread to make pizzas for a while now and it always holds up well. It also adds a great hearty flavor to the pizza. Tonight’s savory sauce-less pizzas were topped with garlic flavored spinach, chopped cherry tomatoes, and a bright orange bell pepper. Variety is key! I used low-fat mozzarella cheese, as well as extra virgin olive oil underneath all of the healthy veggies. I paired the personal pie with a cucumber goat cheese salad, seasoned with basil. You will continue to see more vegetarian posts as I ease myself into becoming a vegetarian. I’m not quite there yet, but as I learn more (because it is very important to me that I still take in all the necessary vitamins, minerals, protein, and amino acids) I will post more animal-free recipes.
Ingredients for white spinach pizza topped with bell peppers:
*Serves 2 (with leftovers)
2 wheat naan bread (note that the naan bread are wheat, they also contain enriched wheat flour, which is not the same thing as whole wheat)
1 tbsp of olive oil
3 cloves of diced garlic
1 orange bell pepper
1/4 tsp of salt, freshly ground pepper, thyme, basil, oregano, and garlic powder
1/4 cup of grape tomatoes, halved (or any tomato variety you have on hand)
2 cups of green spinach, washed
A drizzle of extra virgin olive oil (for the naan breads)
1/2 cup of low-fat mozzarella cheese
1- Preheat the oven to 350 degrees.
2- After dicing the garlic, add it to a frying pan with the tablespoon of olive oil. After about two minutes add the bell pepper and all of the spices.
3- Let the pepper soften for about 3-5 minutes. Then add in the diced tomatoes. After letting the tomatoes heat through, add the spinach to the pan.
4- While the vegetables are cooking, lightly drizzle the naan bread with the extra virgin olive oil. Top the bread with mozzarella cheese and then with the vegetable mixture (once the spinach is wilted). Be sure not to let any of the liquid on the pizza (or it will cause the pie to become soft and soggy). Pop the pizzas into the oven and let them cook for about 10 minutes, or until the cheese is melted (and begins to show a slight brown). You can keep them in for longer if you like the crust crisper.
Ingredients and prepping directions for cucumber basil salad, sprinkled with goat cheese:
1 organic cucumber, peeled and sliced into 1/4 inch thick slices
1/2 cup of grape tomatoes, washed and dried
1/2 teaspoon of dried basil or a teaspoon fresh basil if you have it
1 tbsp of extra virgin olive oil
salt and pepper to taste
1/4 cup of crumbled goat cheese
1- This salad is super simple, which is the best thing about it! After washing, dicing, and peeling your cucumber, add it to a bowl. Then add the rest of your ingredients, except for the cheese. Stir everything together and then sprinkle the goat cheese on top. You are left with an easily assembled salad with simple yet delicious flavor.
